Cayenne Shrimp Stir-fry

List of Ingredients
1 tsp each salt and cayenne pepper
4/4 lb peeled, medium-size shrimp
1 tsp oil
3 large garlic cloves
3/4 cup chopped green onion
1 1/2 cups snow peas, strings removed
4 cups chopped veggies, such as red or green pepper, carrots, broccoli
2 tablespoons chicken or vegetble broth (can use water)
1 tablespoon lemon zestRecipe
Toss raw shrimp with salt and cayenne.
Heat oil on med. high, in nonstick pan. Saute shrimp, stirring often, about 2 minutes. Remove shrimp. In the same pan, saute garlic and green onions for about 1 minute. Add peas, vegetables and broth. Reduce heat and cook about 3 minutes. Return shrimp to pan, with lemon zest and cook one more minute. Serve with rice.
Rice: 1/2 cup=2 points.
