4 boneless skinless chicken breasts
4 wedges Laughing Cow Light Swiss cheese (available at Kroger and other grocery stores)
4 slices lean ham, such as Healthy Choice
1 cup crushed cornflake crumbs (I buy them already crushed, in a box on the Shake 'n Bake aisle)Recipe
Preheat oven to 350, and spray a baking pan with nonstick spray. Pound each chicken breast to an even thickness. Spread each with one wedge of the cheese, and lay a piece of ham on top of the cheese. Roll up and secure with toothpicks. Roll in cornflake crumbs. Place in sprayed pan, and bake for 40 minutes.
