Mix coconut, sugar, flour and salt in bowl. Stir in egg whites, grated peel and almond extract until well blended.
Drop by tablespoonfuls onto lightly greased and floured cookie sheets. Bake at 325 degrees for 20 minutes or until edges of cookies are golden brown. Cool on wire racks.
Makes 2 dozen.
You can also use grated orange or lime zest instead of lemon zest or a combination of all three.
