HUNGARIAN GOULASH - South Beach

List of Ingredients
1 1/2 lbs. stew meat, cut into 1" chunks
1 large onion, chopped
2 cloves garlic, crushed (I just used the minced garlic in a jar!)
1/2 tsp. salt
1/2 tsp. pepper
1/2 cup water
2 TBS. tomato paste (I ended up just adding the whole can, what are you going to do with a bit of tomato paste!!)
2 TBS. paprika
1/2 cup light sour cream OR plain yogurt
Recipe
Place meat in a slow cooker that has been sprayed with Pam. Cover with onion and garlic. In a small bowl, combine the salt, pepper, water and tomato paste and paprika. Pour over meat and mix together. Cover and cook on LOW for 8 to 9 hours. Turn control to HIGH. Stir in sour cream or yogurt and cook uncovered for 10 minutes until slightly thickened.
This is for Phase 1, but for Phase 2 you can serve it over whole wheat noodles.
Also reheats well....
