    Chile Rellenos

    List of Ingredients

    6 large fresh green chiles
    1/2 pound mozzarella or jack cheese
    4 beaten eggs
    1/2 tsp. salt
    4 tbsp. flour
    oil as needed for frying

    Recipe

    Sear peppers on all sides under broiler - wrap in damp towel to steam a few minutes until skins peel off easily. Split peppers and remove seeds - stuff with cheese.

    Make batter from eggs, flour and salt. Dip stuffed peppers in batter one at a time, then slip into hot oil. Cook until nicely browned, turning to brown all sides. Serve immediately, smothered with green chile sauce and topped with shredded lettuce & diced tomato, if desired. Good side dishes are beans and/or spanish rice.

    (If you wish to dispense with searing & peeling the peppers, it won't effect the flavor of the dish, but the batter won't stick near as well.)
