    Chile Rellenos (Stuffed chile peppers)

    List of Ingredients

    Flour
    Sharp cheese, cut in 1/2 x 1" strips
    Whole green canned chilis
    Egg (one egg per 2 chiles)
    Pinch of cream of tartar per egg
    Oil for frying

    Recipe

    Drain peppers, open, using slit already there. Scrape seeds to loosen, rinse. Insert cheese in chili. Dredge in flour.

    Separate eggs. Beat egg whites with cream of tartar till stiff. Beat yokes to mix and fold into whites. Plop chili in egg mixture to coat. Fry in 1/2" of hot oil.
