Santa Fe Stuffed Peppers

List of Ingredients
1 cup frozen Boca Meatless ground burger
1/2 cup frozen whole kernel corn
1/2 cup thick & chunky salsa
3/4 cup instant brown rice
1/2 cup colby-jack cheese, shredded
1 tablespoon cilantro, chopped
1/4 cup water
1 large bell pepper, cut in half lengthwise; seeds removed Recipe
1. Preheat oven to 400°.
2. Mix first three ingredients in skillet; cook on medium heat 5 minutes or until thoroughly heated, stirring frequently.
3. Remove from heat; add next three ingredients; mix well.
4. Pour water into 8" square baking dish. Spoon burger mixture evenly into pepper halves; place in dish. Cover with foil.
5. Bake at 400° for 30 minutes.
Serves 2.
