Chicken Quesadillas

I use my GF grill because then I don't have to flip them.
List of Ingredients
chicken breasts, cut in small chunks
1 can Ro-Tel
seasonings of choice, such as Cajun, chili powder, cumin
finely grated cheddar/jack or colby/jack cheese
flour tortillas - two per quesadilla
Recipe
I just spray a skillet with a little cooking spray and stir-fry small chunks of chicken breast, then I add a can of Rotel diced tomatoes with chiles (sometimes I use the Original, sometimes the blue can) and whatever spices I feel like...maybe some Cajun seasoning, maybe some chili powder and cumin. Cole doesn't like spicy so I keep it under control. When it cooks down, I turn off the burner, spray the GF with cooking spray and add a flour tortilla. I spread some of the chicken mixture on the tortilla, top with some finely shredded Colby-Jack or Cheddar-Jack, and then another tortilla. I close the lid to the grill and let it cook until slightly browned and firm enough to lift with a spatula and not have fall apart. Cut in quarters and serve with whatever condiments you like. Told you it was basic!
I think you could make them more interesting by using a chipotle sauce in place of or in addition to the Rotel or varying the spices. You could also toss in some additional veggies...mushrooms, zucchini, scallions.
