    Crockpot Enchiladas

    List of Ingredients

    1 can tomato sauce
    1 small onion, chopped
    garlic, salt and pepper, and cayenne
    pepper to taste
    1 can tomato paste
    1 lb. hamburger, browned and drained
    2 cups cheddar, shredded
    9 corn tortillas

    Recipe

    Blend the tomato sauce and paste, onion, garlic, salt and pepper, and cayenne. Boil 5 minutes in saucepan. Place 3 tortillas in bottom of crock. Put 1/3 of the beef, 1/3 of the sauce, and 1/3 of the cheese on top. Repeat these layers until all ingredients are used. Cover and cook on low 6-8 hrs. Serve with a dollop of sour cream on top, if desired, with guacamole and tortilla chips on the side.
