1 cup shredded beef roast w/onions and green pepper (recipe follows)
vegetable oil
8 eggs
12 flour tortillas
1-1/2 cups fresh salsa
1-1/2 cups shredded cheddar cheese

Heat oil in a large skillet over medium heat. Cook beef and eggs together until eggs are set. Remove from heat. Make a burrito using a flour tortilla, fresh salsa, cheese and beef/egg mixture.
shredded beef recipe:
4-5 pound beef roast
4 cloves garlic, crushed
1 green pepper, cut into strips
1 medium onion, cut into strips
1 cup fresh salsa
Place roast in crock pot. Cover with remaining ingredients. Cook on low setting for 8 to 10 hours, until roast pulls apart easily with a fork.
Remove roast from crock pot. Using a fork, shred beef. Using a slotted spoon, remove vegetables from crock pot and mix with shredded beef. Serve with tortillas, guacamole and salsa.
