Mexican Cornbread

A tremendous one-dish meal!
List of Ingredients
1 cup cornmeal
1 tsp. salt
1 tsp. soda
2 beaten eggs
1 cup buttermilk
1/2 cup vegetable oil or bacon grease
1½ - 2 cup whole kernel corn
1 lb. ground beef, cooked/crumbled
10 oz. grated cheddar cheese
1/2 cup chopped onion
cayenne to taste
Recipe
Combine first 7 ingredients (cornmeal through corn). Lightly grease (or use cooking spray) a large baking dish. Layer 1/2 of cornmeal batter, followed by meat, cheese, onion, cayenne and top with the rest of the cornmeal batter.
Bake in preheated 350° oven for 45 minutes. Serve with salsa and/or sour cream if desired.
