1/2 cup chopped fresh cilantro (I had to used dried but worked ok)
3 Tbs. fresh lime juice (again I had to use juice from one of those plastic limes but worked well)
3Tbs minced jalapeno peppers ( I used chopped green bell peppers as we don't like jalapenos!)
1 garlic clove, minced
Recipe
Mix all the above ingredients in a bowl. Season with salt and pepper. Can be made 4 hours ahead of time. Cover and chill.
As you can see, I made a few substitutions but everything worked just fine. I'm sure some of you will like the jalapeno peppers but it is really good with the bell peppers too. This makes a really pretty dish and we enjoyed it with taco chips, but put it on tacos too.
