Quick & Easy Burritos

Recipe Introduction
This is easy and requires no rocket science, and the kids love them. Makes great camping snack too.
List of Ingredients
Leftover pot roast
2 tablespoons oil
3 tablespoon fresh salsa
1/2 diced onion
2 cloves minced garlic
1-2 tomatoes diced
1 medium potato diced in small squares
1 cup water
Recipe
Shred left over pot roast, set aside.
In a saucepan or dutch oven (depending on how much meat) saute onion, garlic and tomatoes. Add meat, potatos, water and salsa. Simmer until the potatos are well cooked.
Roll in warm flour tortillas, draining any remaining liquid, and serve.
Another variation: instead of salsa can add chili powder.
