    Recipe Introduction

I usually make this from fresh ingredients from my garden, and after many experiments my family adopted this recipe as SALSA PERFECTO.

    List of Ingredients

2 cans diced tomatoes, good quality
    1 large onion
    1 bell pepper
    6 jalapenos peppers
    1 habanero pepper
3 cloves garlic, minced or pressed
    1/4 cup vinegar
    Salt
    1/2 cup cilantro, chopped
    1 lime, juiced

    Recipe

First pulse the tomatoes in food processor or blender until desired consistency. Place in bowl. Cut the onion and peppers into large chunks and pulse until desired consistency. (Adjust the hot peppers to your liking, we like it hot!) Place in bowl and add remaining ingredients and mix well.

NOTE: I love cilantro and other herbs, and grow alot of them. To preserve what you don't use, such as cilantro (you use a little but have to buy a bunch), use this trick. Chop the herb, and using a plain old-fashioned ice tray, place 1 tablespoon in each cube. Add enough water to cover and freeze. When frozen I pop the cubes into a labeled freezer bag and when you need it you can pop it into soups or thaw in a fine mesh strainer.
