2 pickled Serrano or jalapeno peppers, rinsed, seeded, and chopped -OR- ½ tsp red pepper
¼ tsp salt
2 C chopped cooked chicken or pork
12 6” tortillas
2 C guacamole
½ C sour cream
Recipe
Cook onion in oil til tender; stir in tomato sauce, pepper & salt. Simmer, covered for 5 minutes. Stir in chicken or pork; heat through. Keep warm.
In small skillet, heat 2 T oil. Holding tortillas with tongs, dip each one in the hot oil for about 10 seconds or just til limp. Drain on paper towels.
Spoon guacamole, sour cream & meat mix on 1/2 of each tortilla. Fold in half over filling & serve immediately
