    Turkey Enchiladas

    List of Ingredients

    2 cups cooked diced turkey
    1 4-oz. can chopped green chiles
    1 tsp. dried onion flakes
    1 tsp. dried cilantro
    2 10-oz. cans enchilada sauce
    12 corn tortillas
    2 tbsp. chopped onion
    1 cup chopped tomato
    1/4 cup chopped black olives
    1 cup shredded cheddar cheese

    Recipe

    Combine turkey, chiles, onion flakes, cilantro and half the enchilada sauce. Place two heaping tbsp. of the mixture across the center of each tortilla, and gently roll up. Place seam side down in greased 9x13 pan. Top with remaining enchilada sauce, onion, tomato, olives & cheese.

    Bake at 350° for 25 to 30 minutes or until mixture is hot and bubbly.

    Serves 6.
