    Asian Pecan Shrimp & Rice Salad

    List of Ingredients

    1 pound cooked shrimp, medium size
    6 cups cooked rice
    1 cup toasted pecan halves
    1 cup sliced green onions
    2/3 cup light-sodium teriyaki sauce or Thai ginger marinade
    1/4 cup orange juice

    Recipe

    Set aside 8 shrimp for garnish if desired. Halve remaining shrimp lengthwise. Mix the cut shrimp with rice, pecans and green onions in a bowl. Whisk together sauce or marinade and orange juice. Pour over rice mixture, tossing to coat. Refrigerate for 4 hrs. Stir before serving. Serve on lettuce leaves and garnish with shrimp.
