    Smothered Sweet & Sour Chicken

    List of Ingredients

    2 T vegetable oil
    3# chicken legs
    1 lrg onion chopped {I've used red n’ used bout ½ n' it's fine}
    3 T ketchup
    2 T lemon juice
    2 T soy sauce
    2 T sugar
    ½ tsp freshly ground pepper {I use cracked pepper or reg}
    1 T cornstarch dissolved in ¼ C cold water
    Lemon slices {optional}
    {I also add diced green bell pepper + crushed pineapple w/smidge of the juice}

    Recipe

    In a lrg fry pan, heat oil & brown chicken all sides about 10 min’s. {I pepper the breasts first}.

    Meanwhile, in a small bowl, combine onion, ketchup, lemon juice soy sauce, sugar, pepper {bell pepper, pineapple} & ½ C water, blend well.

    Pour sweet n sour mix over chicken. Cover, reduce heat to low & cook 20 min’s until tender. Remove Chicken to serving platter & keep warm {I do this by coverin n’ stickin in a slow oven bout 150°}

    Add cornstarch mix to sauce. Raise heat, bring to a boil, and cook, stirring, til sauce thickens, bout 2 min’s. Pour over chicken & garnish w/lemon slices if desired.

    Now, I place chicken a’top steamed rice n’ leave the sauce on the side so the “eater” can have as much or lil as they like.

    This can be done w/2 or 3 breasts, and personally I don't reduce the sweet n’ sour, but I LIKE my sweet n’sour. LOL!!!
