Greek Rice Salad

List of Ingredients
1/2 cup sun-dried tomatoes (oil packed), chopped
3 tablespoons oil from jar of sun-dried tomatoes
2 tablespoons olive oil
3 tablespoons lemon juice
3 cups cooked rice
1/2 cup red onion, diced
1/2 cup drained, pitted, and chopped Kalamata olives
2 (4-ounce) packages crumbled Feta cheese
Salt and pepper to taste
1/2 (6-ounce) package baby spinach leaves, thinly sliced
Recipe
Combine sun-dried tomatoes, oils, lemon juice and rice. Stir in onion, olives, and cheese. Add salt and pepper to taste. Add spinach and toss gently to combine. Makes 6 servings. Best at room temperature.
