    1 pound pork sausage (beef may be used)
    1 medium green pepper, sliced
    2 stalkes celery, thinly sliced
    1 midium onion, sliced
    1 14 oz can pineapple chunks, drained (reserving liquid)
    1/4 cup vinegar
    1 Tbsp soy sausce
    2 Tbsps cornstarch
    1/4 cup brown sugar

    Fry sausages untill no longer pink in the middle. Remove sausages from pan. Drain grease reserving 1 tbsp in pan. Add green pepper, celery and onion and scramble fry until tender crisp; add pineapples to vegetables cook 1 minute longer. Combine sugar and cornstarch in bowl and mix well. Add pineapple juice, vinegar and soy sauce; mix well. Slowly add to vegetable mixture; cook and stir on medium high heat until thick and clear. Add sausages and serve over a bed of rice.

    Serves 4.
