    3-4 Tbsp olive oil

    1-1 1/2 pounds Sweet or Hot Italian Sausage

    4 medium onions cut into slivers

    4 or 5 (depending on taste!) Italian peppers (they are sometimes called banana peppers) they are the best to use but feel free to use any kind yellow, green or red pepper or a mixture of colors, it will look pretty and still tastes great!) cored, seeded and cut into strips

    Salt and pepper to taste

    Using a heavy frying pan, use 1 Tbsp of olive oil and heat until hot. Add sausage and brown on all sides until almost cooked. Remove from pan.

    Add remaining olive oil and add the onions and peppers, salt and pepper to taste. Toss them in the pan to coat with oil and cook slowly stirring often until soft and wilted. This will take quite some time you want the onions to be almost carmelized. The peppers and onions should be very soft and wilted and slighty browned.

    Add sausage and finish cooking them in with the peppers and onions. You can eat these as a meal or use a nice crusty italian bread and make a great sandwich!

    Make sure once the onions and peppers get cooking you turn the heat down very low so they don't burn and keep stirring every once in a while.

    I also add a handful of fresh basil leaves towards the middle of cooking the peppers and onions just because I love the taste.
