I use any kind of sausage hubby likes, Brats, Italian, Polish...as long as it's link-style. Fry them in a skillet with a little olive oil. Use a bit of the drippings to make a milk gravy and serve it on mashed potatos. Sometimes, if it's just for me, I use Cream of Mushroom soup for the gravy. You could make it Manhattan-style too, just add bread to the base as you build it.
