2 cups (8 oz.) ziti or pasta of your choice
1 tsp. vegetable oil
1 large onion (1 cup, chopped)
Garalic chopped (my add'n ~ go figure n just to yer taste)
1 lb. extra-lean ground beef
1 cup fresh mushrooms, sliced
2 cups vegetable juice, i.e. V8
1 Tbsp. ketchup
1/2 tsp. garlic powder (I tend to use a tad extra of this)
1/2 tsp. celery salt
1/4 tsp. dried oregano or dried Italian seasoning
1 cup sour cream
Salt and pepper to taste
Recipe
Place the ziti (or pasta) in 2-1/2 quarts of already boiling unsalted water and cook until tender or according to package directions, approximately 12 minutes. Heat oil in a 12-inch skillet over medium heat. Saute chopped onion, add beef and cook, turning and breaking up until it begins to crumble and brown. Add mushrooms. Cook until the beef is completely browned. Add the vegetable juice, ketchup, garlic powder, celery salt and oregano. Stir well to mix and reduce the heat to medium low. Simmer the mixture while the ziti finishes cooking, stirring occasionally. Drain the ziti (or pasta), add it to the skillet and stir well. Stir in the sour cream salt and pepper and cook for an additional minute to heat through. Remove and serve immediately.
