1 lb. Italian Capellini (angel hair)
1 tsp. Extra Virgin Olive Oil
1 14 oz. can Italian Diced Tomatoes
1 tsp. dried oregano
1/2 cup Italian Grated Pure Parmesan Cheese
7 oz. Mozzarella cheese, cubed
Salt to taste
Recipe
1. Heat oil in a large skillet over medium heat (approx. 1-2 minutes). Add tomatoes, oregano and salt and cook rapidly for 20 minutes.
2. Cook pasta according to directions. When done, drain water and put pasta back into same pot, add mozzarella, parmesan, and tomato sauce. Mix well, cover and let sit for 3 minutes.
