    Cauliflower Stir-fry

    List of Ingredients

    1 large head cauliflower, broken into florets
    1 large red pepper, chopped
    2 cups snow peas
    1/2 lb. fresh mushrooms, sliced (optional)
    3/4 lb. medium shrimp, shelled & deveined
    1 clove garlic, minced
    1 tablespoon fresh basil, minced
    salt & pepper to taste
    dash of cayenne

    Recipe

    Saute cauliflower in small amount of oil for 8-10 minutes. Add red pepper and saute just until tender. Add peas, mushrooms, shrimp, garlic, basil and seasonings. Stir-fry 4-5 minutes - just until shrimp is pink and peas are tender. Do not overcook. Serve over rice or linguini.
