1 box of linguine
4-5 c fresh broccoli florets
2 cloves minced garlic
3-4 chicken breast fillets (abt. 1 1/2 lb), cut in strips
1/2 stick butter AND 1/4 c olive oil
3/4 c grated parmesan
1/2 c shredded mozzarella/cheddar blend (I used Sorrento pre-shredded, but you could shred & combine yourself or just use mozzarella)
Recipe
Prepare pasta as directed. Toss broccoli into boiling water with five minutes left to cook. Drain pasta/broccoli mix and cover; set aside. In same saucepan heat oil and butter, and saute' garlic for 1 minute. Add chicken and saute until no longer pink. Add pasta/broccoli and stir to coat. Stir in cheeses. Serve with bread and a salad!
