Chicken Lasagne

List of Ingredients
2 beaten eggs
2 cups ricotta cheese
1 cup mayonnaise
1/4 cup fresh grated parmesan
1 tbsp. parsley flakes
1 tsp. thyme leaves
1/2 tsp. salt
1/8 tsp. pepper
2 cups diced cooked chicken
1/4 cup sliced green onion
1 can artichoke hearts, drain & chop
1 small jar diced pimentos, drained
2 cups grated Jack cheeseRecipe
Combine first twelve ingredients and mix well. Layer 3 or 4 noodles in lightly greased baking dish, overlap slightly. Top with half of Jack cheese. Repeat layers one time.
Cover with foil and bake at 350° for 40-45 minutes until filling is set and edges are bubbly. Garnish with additional sliced green onions & fresh parsley sprigs, if desired.
