2 cups 1% milk
2.5 tablespoons of cornstarch
1/3 cup romano or parmesan
1 tablespoon low fat cream cheese, (not nonfat)
salt and pepper to taste

In a sauce pan, bring ALMOST to a boil 1.5 cups milk. Completely dissolve cornstarch in remaining milk, add to hot milk. add cream cheese and melt, when melted add remaining cheese.
