Fresh Tomato & Basil Risotto with Mozzar

Recipe Introduction
I Make this with BBQ shrimp - very yummy and a GREAT way to use up the fresh tomatoes and basil in my garden.
List of Ingredients
1 1/2 cups plum tomato, diced (I used whatever type was ripe)
2 Tbsp chopped fresh basil
1 Tbsp olive oil
1/2 tsp salt
1 garlic clove, crushed
42 ounces low-salt chicken broth
2 tsp olive oil
1/2 cup finely chopped onion
1 1/2 cups Arborio rice, uncooked
1/3 cup dry white wine
1/2 cup Mozzarella cheese, diced (I should have diced more finely so cheese would melt more quickly)
1/2 tsp freshly ground pepper
2 Tbsp grated fresh Parmesan cheese
Recipe
Combine first 5 ingredients in a small bowl; stir well, and set aside. Bring broth to a simmer in a medium saucepan (do not boil). Keep warm over low heat. Heat 2 teaspoons oil in a large saucepan over medium high heat. Add onion; saute 3 minutes. Add rice; cook 1 minute, stirring constantly. Add wine; cook 1 minute or until liquid is nearly absorbed, stirring constantly. Add warm broth, 1/2 cup at a time, stirring constantly until each portion of broth is absorbed before adding the next (about 20 minutes total). Add tomato mixture; cook 2 minutes, stirring constantly Remove from heat; stir in Mozzarella cheese and pepper. Sprinkle each serving with Parmesan cheese to taste.
