2 cans clams chopped or minced clams (you use the clam juice too!)
3-4 Tbsp olive oil
2-3 cloves garlic minced
1/4 cup chopped parsley
1/3 cup water or a bottle of clam juice
salt and pepper to taste
1 lb linguine

Start water to boil for pasta, make pasta while starting clam sauce.
In a small sauce pan add olive oil and heat until hot, add minced garlic and cook a few minutes. Watch the heat, keeping it low and don't let the garlic get too brown as it makes it bitter.
Add parsley and mix it with the garlic and cook about 1 minute.
Add the canned clams and water/clam juice. Add salt and pepper to taste. Bring to a boil and then turn heat down to a simmer. Simmer it at least 10-15 minutes or longer. Simmer clam sauce while cooking pasta.
Drain pasta when it's cooked the way you like it. I like mine a little chewy!
Place pasta back in pot, pour clam sauce over it and toss to coat. Place on a big serving platter and enjoy!!
Please adjust seasonings to the way you like it adding more olive oil, garlic or parsley. We also like ours lightly sprinkled with seasoned toasted bread crumbs. To do that take a cup or so of italian bread crumbs moisten it with a little olive oil and toss and cook watching it carefully until crumbs are a nice toasty brown. Be careful and make sure you keep and eye on them and stir constantly as it's very easy to burn them! Sprinkle lightly over pasta and clams!!
