1 & 1/2 cup elbow macaroni
3 Tblsp butter
2 C Milk
2 Tblsp all-purpose flour
salt & pepper
1/4 cup chopped onion
8 oz sharp cheddar
1 tomato, sliced (optional)
Recipe
Cook mac in boiling salted water (I generally add a bit of butter too) til tender & drain.
In saucepan melt butter n saute onion.
I put milk/flour/salt/pepper in screw-top jar n shake to mix thoroughly, then stir into butter n onion. Cook n stir til thick n bubbly. (I use a whisk for this ~ works better)
Add grated (or cubed) cheese ~ I like to grate because it blends/mix better. I also use part cheddar n part jack dependin on my mood! ;) ~ n stir until cheese is melted thru.
Stir cheese sauce into mac. You can add ham or tuna or chicken or whatnot too if ya want.
Turn into a 1 & 1/2 qt casserole dish. I sprinkle fine bread crumbs or crushed saltines on top. Some folks like to lay salted sliced tomatos over, but I prefer the bread crumbs with my tomato slices on the side! ;o)
Bake at 350° for 35-40 min's or til heated thru ~ remember, if yer usin a glass or dark colored pan, drop temp by 25°.
