Mexican Chicken w/Rice

1 Tablespoon oil
1 pound chicken, cubed
1 small onion, chopped
1 small green pepper, chopped
10 ounce can corn
1 cup chicken broth
1 cup mild salsa
1 1/2 cups rice
1/2 cup cheddar cheese, shreddedRecipe
Heat oil and add chicken, onion, and green pepper. Sautè until chicken is cooked. Add corn, broth, and salsa; brng to a boil.
Stir in rice and cover.
Remove from heat. Let stand 5 minutes. Fluff with fork and sprinkle with cheese.
