Pepperoni Penne

3/4 pound penne rigate
1/2 pound sliced pepperoni
2 cloves garlic, minced
1 lb tomatoes, (about 2) peeled and chopped (approx. 2 cups)
1 cup half & half (I used fat free)
1/2 tsp salt
1/4 tsp fresh ground black pepper
Grated Parmesan cheese for serving Recipe
Cook Penne until just done.
Cut pepperoni slices into quarters. Saute about 2 minutes over medium heat. Discard all but 3 T of fat.
Stir garlic into the pan and cook 30 seconds. Add tomatoes and cook for 5 minutes. Reduce heat to low. Stir in cream, S & P and simmer 1 minute.
Toss with pasta and serve with parmesan cheese.
