Pork Chops, Mushrooms & Brown Rice

1½ - 2 cups cooked brown rice
3 - 4 tbsp. butter or margarine
1/4 cup minced fresh onion
1/4 cup minced green pepper
8 oz. fresh mushrooms, chopped
2 - 3 tbsp. flour
salt & pepper to taste
cajun seasoning to taste
1 can evaporated milk
2 or 3 boneless pork chops
¼ to ½ cup grated fresh parmesanRecipe
Cook rice according to package directions.
Sauté onion, green pepper & mushrooms in butter until tender. Add seasonings & flour; blend together and cook 1 or 2 minutes before adding milk. Blend until smooth & cook until thickened. Add a little water if too thick - the rice will absorb quite a bit of moisture, so it can be a little soupy.
Add sauce to rice and mix gently. Layer in a shallow baking pan with grilled pork chops, so just the edge of the chops shows above the rice mixture. Sprinkle with grated parmesan and bake at 350° about 30 minutes, or until heated through and the parmesan browns nice & golden.
Serve immediately.
