Pork Chops & Rice for Two

2 boneless pork chops
1 tbsp. butter or margarine
1/4 cup red or green bell pepper
1/4 cup onion
2 cups cooked rice
1 can cream of mushroom soup
1 tsp. parsley flakes
dash cayenne
1/4 cup fresh grated parmesanRecipe
Brown pork chops in butter or margarine; remove from skillet and add pepper & onion to drippings; sauté until tender. Add rice, soup, parsley & cayenne; stir to blend. Place rice mixture in baking dish and layer pork chops in so that only the top edge of the chops shows above the rice. Sprinkle with parmesan and bake at 350° for 30 minutes, or until cheese has browned to golden.
