Southwestern Baked Ziti

12 oz ziti or penne pasta
2 tsp oil, preferably olive
1 onion, chopped, 1 cup
2 cloves garlic, minced
1 lb ground beef
1 1/4 tsp ground cumin
1 1/4 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
1/4 tsp chili powder
1 can (28 oz) tomato puree
8 oz Cheddar cheese, shredded, 2 cups
1 recipe Garden-fresh salsa to followRecipe
Cook pasta according to package directions; drain and set aside.
Preheat oven to 350 degrees.
In skillet heat oil over medium-high heat. Add onion and garlic; cook until lightly browned, 5 minutes. Stir in next 6 ingredients; cook until beef is no longer pink, 5-7 minutes. Stir in puree; cook until mixture thickens, 4-5 minutes. Combine pasta with beef mixture; transfer half to ungreased 13X9 baking dish. Sprinkle with 1/2 of the cheese; top with remaining pasta mixture, cheese and salsa.
Cover with foil; bake 15 minutes. Remove foil; bake until cheese melts, 5-10 minutes.
Garden-Fresh Salsa
1 lb plum tomatoes, about 6, seeded and chopped, 1 3/4 cups
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
1-2 jalapenos, seeded and chopped
1 tblsp grated lime zest
1 tblsp lime juice
1/4 tsp salt
1/4 tsp pepper
In a nonaluminum bowl mix all ingredients. Serve immediately or let stand 30 minutes to allow flavors to blend; serve or wrap and refrigerate until ready to use. Makes 2 cups.
