Spaetzel Egg Dumplings

2 large eggs
1½ cups flour
1/2 cup water
1/2 tsp. salt
1/4 tsp. baking powder
pinch ground nutmeg
1/4 cup plain bread crumbs
1/2 cup butterRecipe
Set a pot of lightly salted water on the stove top to boil. Reduce the heat to maintain a gentle, rolling boil.
Meanwhile, in a large mixing bowl, lightly beat the eggs and blend them with the flour, water, salt, baking powder & nutmeg. Drop a few small bits of the batter into the simmering salted water. Let the dumplings boil for 4 - 5
minutes.
Remove the dumplings with a slotted spoon and let cool briefly, then test the dumplings. They should be light in texture. If they are dense or heavy, add several tablespoons of water to the batter and mix well.
Repeat the cooking process until all the batter has been used, placing the finished dumplings in a bowl as you work.
In a skillet over medium heat, sauté the bread crumbs in the butter. Top the dumplings with the buttered bread crumbs and serve warm.
