Spaghetti with Rubies (beets)

This simple dish is simply delicious - a good side dish with schnitzel or a breaded chicken pattie.

2 cloves minced garlic
pinch crushed red pepper
olive oil as needed
salt to taste
2-3 cups beets, cooked, peeled & diced
spaghetti or linguini, cooked
Recipe
Sauté garlic and red pepper in olive oil until sizzling and fragrant. Add beets and toss until coated. Add pasta and some of the cooking water; toss until coated and simmer until evenly colored, stirring constantly - about 2 minutes.
Serve immediately.
