    List of Ingredients

    2 - 4 strips diced bacon
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    1 clove minced garlic
    1 pint canned tomatoes
    1 cup water
    1/2 tsp. salt
    1/8 tsp. black pepper
    1 bay leaf
    1/2 cup uncooked rice (converted rice is good)
    cayenne to taste, for extra spiciness (optional)

    Recipe

    Sauté bacon in large skillet until about half cooked; add onion, green pepper and garlic - cook until tender. Add tomatoes, water, salt, pepper & bay leaves and bring to a boil. Add rice, stir, cover and reduce heat. Cook about 30 minutes or until rice is tender and water absorbed. Remove bay leaves and serve hot.
