    List of Ingredients




    2 cups brown rice, cooked and cooled
    2 whole large eggs, beaten
    1/2 pound lean ground turkey
    1/2 cup sliced green onions (about 8 medium)(I used less because of the onions in the stir-fry mix)
    2 teaspoons minced garlic
    2 cups frozen mixed vegetables (I subbed one 16-oz. package of stir-fry vegetables)
    1/4 cup soy sauce
    2 teaspoons sesame oil
    1/4 teaspoon ground red pepper

    Recipe



    1. Spray wok or 12" nonstick skillet with nonstick cooking spray; heat over medium heat until hot. Add eggs; cook 1 minute or until firm, but still moist, stirring occasionally. Remove and place on plate. Cut into pieces; cover to keep warm.

    2. In same wok/skillet, cook turkey, onions, and garlic over medium heat for 6 to 8 minutes or until turkey is no onger pink, stirring frequenty. Add frozen vegetables and rice; cook and stir an additional 4 to 5 minutes or until vegetables are thawed.

    3. In 1-cup measure, combine remaining ingredients; mix well. Stir into turkey mixture. Return eggs to wok/skillet; cook and stir an additional 2 to 3 minutes or until thoroughly heated.

    Serves 4
