If you make a pork roast, this is a great follow-up recipe to make a tasty pot of pork rice.

2 slices of tocino (pork fat - its optional)
2 Chorizos/or some cooking ham
1 can pigeon peas (gandules)
2 packets sazon (1 can of tomato sauce if you only have one packet but the packet is necessary for flavor)
1 T oil of choice
salt to taste
1-2 T sofrito (comes jarred in the ethnic section)
3 cups rice
water

If you make a pork roast, u se some grease drippings (1 t.) (or leftover meat) or the tocino. The tocino will render some fat. Then add the ham and sofrito and fry slightly. Add the gandules and another 2 tsp of drippings or grease. Let simmer for about a half hour. Add salt, sazon pakets & rice, mix well.
Add enough water to cover the cooking spoon when sitting on top of the rice. Cover and cook over medium heat for about a half hour. Turn the rice to check to see if its cooked. continue to cook covered until done.
Hopefully I typed this well enough for someone to try. This is a dish my friend has passed along to me. It is marvelous and it makes a lot, plus you can freeze it if needed. I adore it and am always hoping someone will try it out. It sounds more complicated than it is really, and the seasoning and such are not wasted since I have more recipes to use them up (sazon and sofrito).
