    1 boneless pork loin
    1 tbsp. per pound Morton’s Tender Quick
    1 tsp. per pound brown sugar
    1/2 tsp. hickory smoked salt
    1/4 cup water
    1 tsp. liquid smoke
    Ground black pepper, to taste

    Recipe



    Partially freeze pork loin until firm. Immediately trim off fat on the outside of pork loin. Combine water and liquid smoke. Soak pork loin in mixture for one hour, then remove - DO NOT RINSE. Mix Morton’s Tender Quick, brown sugar, and hickory smoked salt together. Sprinkle that mixture evenly onto pork loin. Place pork loin in ziploc bag for 5 days. After 5 days, take out and rinse in cold water. Sprinkle ground black pepper onto pork loin and cut into thin slices, then freeze.

    When ready to serve, fry slices in frying pan in a small amount of olive oil.
