4 cups cooked rice
1 TBSP dried parsley
1 TSP salt
1/2 TSP curry powder
12 slices deli ham (1/8 inch thick) -OR- thinly sliced leftover ham
4 hard cooked eggs, sliced
CURRY SAUCE:
1/4 cup butter or margarine
2 TBSP corn starch
1/4 TSP curry powder
1/4 TSP salt
2 cups milk, divided
Recipe
In a large bowl, combine first 4 ingredients. Spoon about a 1/3 cup down the center of each
ham slice and roll up. Secure with toothpick
if desired.
Place seam down in a 13 x 9 inch pan. Arrange egg slices on top of ham rolls.
For sauce:
Melt butter in a saucepan. Combine cornstarch, curry powder, salt and 1/3 cup milk. Gradually stir into butter. Add remaining milk and bring to a boil, stirring constantly. Cook and stir 2 minutes.
Pour over ham rolls. Cover and bake at 375 for 25 minutes. Uncover and bake 10 minutes more.
