    Grilled Pork with Peach Salsa for GF grill

    List of Ingredients

    46-8oz pork tenderloins
    1 teaspoon vegetable oil
    1 tablespoon honey
    2 tablespoons low sodium soy sauce
    1 tablespoon cider vinegar
    1 teapoon ginger
    1/4 teaspoon ground cinnamon
    2 tablespoons apricot marmalade
    3 peaches peeled and cut into 1/2" pieces
    1/4 cup chopped red onion
    2 tablespoons fresh parsley, minced
    nonfat cooking spray

    Recipe

    Remove visible fat from pork. Place in a flat glass pan. Combine oil, honey, soy, and vinegar, pour over pork. Cover and refrigerate 1-8 hours.

    In a large serving bowl, combine ginger, cinnamon, marmalade, peaches, onion, and parsley, toss lightly, and refrigerate. Coat grill with cooking spray and preheat 5 minutes. Grill tenderloins for 4-6 minutes, or according to your tastes. To serve, spoon salsa over tenderloin.
