    Hawaiian Pork Chop Medley

    This was my mother's recipe and she didn't write down quantities for the chops or the nutmeg, so you have to fake it a little. When my mother made this, she stacked up many kinds of fruits, including concord grapes. The fruit was pretty well spent after it was cooked and I didn't eat it, but the pork chops were the very best meat I'd ever eaten, and I really don't care for meat that much. I stuffed myself silly!

    List of Ingredients




    Pork chops (or ham can be substituted)
    1/3 cup brown sugar
    3 Tablespoons mustard
    3 Tablespoons orange Marmalade
    Salt to taste
    Pepper to taste
    Nutmeg to taste

    Recipe



    Prefry the pork chops until they are light brown; don't let them dry out by overcooking.

    Place the meat in a large flat baking dish. Cover the meat with as many fruits as possible: Fresh peaches, pineapple, bananas (cut lengthwise), grapes, cored pears, apple wedges, cherries, orange segments, etc! Just stack that fruit up! (Fresh fruits are best, but canned ones can be used or mixed in.) Arrange canned or cooked yams around the edges.

    Combine the sugar, mustard, marmalade, salt, pepper and nutmeg, then drizzle it over the whole thing.

    Cook at 315 degrees for 1½ hours. (Yes, it really says 315°!)

    Serve with green salad and cornbread or rolls and enjoy.
