Recipe Introduction
One of my favorites--Pork 'n' Corn Roasts - We were discussing old B H & G cookbooks--so have to tell you this recipe I have used since before any of you were born! I don't think it made it to the later editions--but it is really good! This is one that I kept to put in a later edition. Sometimes, if I have company--I make a double recipe of the corn dressing--it's so good!
List of Ingredients
4 to 6 pork chops, cut 1/2" thick
1 T. prepared mustard
1 lb. can (2 c.) cream style corn
2/3 c. soft bread crumbs (I use a whole cup)
1 T. finely chopped green pepper
1 t. salt
2 - 3 T. finely chopped onion
dash pepper
1 c. water
Recipe
Spread pork chops lightly with mustard. Brown well.
Combine corn, bread crumbs, onion, green pepper, salt & pepper.
Arrange chops in 2 layer in baking dish. drain off fat from skillet & add water; heat to a boil; pour liquid AROUND chops and top all with corn mixture.
Cover & bake in 350* oven 15 min.; uncover and bake 45 min. longer.
