4 large pork chops
1 large onion, thickly sliced
1 or 2 zucchini, cut into large chunks
1 very large tomato, cut into chunks (or you could use your canned stewed or diced tomatoes here!)
1 Tbls. oil
garlic powder, oregano, whatever herbs and spices you want
salt and pepper
Recipe
Heat oil in large skillet over medium high heat.
Salt and pepper the pork chops and brown on both sides. Throw in all the vegetables and sprinkle with desired seasonings. Cover with lid and cook over low to medium heat for 1 hour.
You could remove the pork chops and cook down the sauce if it's too watery.
