Pork Chops w/Jalapeno Pecan Stuffing

List of Ingredients
6 boneless loin chops
3/4 cups chopped celery
3/4 cup chopped onion
1/2 cup coarsely chopped pecans
1 medium jalapeno pepper, seeded and chopped (more if you like it hotter)
1 tsp. sage
1/2 tsp rosemary
salt and pepper to taste
2 cups cornbread stuffing mix, such as Pepperidge Farm
1 1/4 cup chicken broth
1 egg, lightly beaten Recipe
Trim fat from chops.
Place a couple of tablespoons oil in a large skillet and brown chops on both sides. Remove chops,and add celery, onions, pecans, jalapeno, and spices; cook 5 minutes or until vegetables are crisp-tender. Combine the vegetables with the stuffing mix and broth; stir in egg.
Spoon stuffing mixture into baking dish; arrange chops on top. Cover and bake at 350 for 40 minutes. Uncover last 10 minutes of baking time.
Delicious served with fresh green beans and cranberry sauce.
