    Pork Chops w/Spinach & Pecan Stuffing

    4 thick cut pork chops with pocket for stuffing

    1 (10 oz)pkg frozen chopped spinach, rinsed and squeezed dry

    1 cup Italian bread crumbs

    2 tablespoons melted butter

    1/2 cup chopped pecans

    Oil

    Recipe

    Make stuffing by mixing together the spinach, bread crumbs, pecans and butter. Stuff into pockets in pork chops. Heat oil in large skillet (cast iron if possible). Add stuffed chops to oil and brown well on both sides. Lower heat and cover and cook for about 30 more minutes.

    Can also bake the chops in the oven at 350 degrees until done if you dont want to fry them, and I think I would add in cheese of some kind. Ricotta or Parmesan, or both. Just to add another flavor.
