List of Ingredients
1 3 Lb Pork Tenderloin
1 C Dry White Wine
1 Lg Onion -- Diced
1 Tsp Garlic -- Minced
1/4 C Fresh Basil Leaves -- Chopped
1 Tsp Thyme
1/2 C Cider Vinegar
1 Qt Tomato Sauce
1/2 C Horseradish, yes you can lower this down to 2 Tbsp & it works fine
1/4 C Tomato Paste
Dash Salt And Pepper
Recipe
In a heavy saucepan combine wine and next 5 ingredients. Simmer until reduced to one-third the original volume. Add tomato sauce, paste, horseradish, salt and pepper. Stir until warm, then cool sauce. Using about 1/2 the sauce
as a glaze, rub into pork in a glass dish. Set aside remaining sauce.
Cover pork and refrigerate for 2 hours. Discard marinade on pork and place in a shallow, lightly greased pan in a 450 oven. Bake 20 to 25 minutes.
Meanwhile, reheat the remaining sauce. When pork is done, slice to 1/2inch medallions. Cover bottom of each plate with heated sauce and arrange
medallion in sauce.
